Fried pork chops are great, but sometimes you want something with a little bit of sauce. This sweet and saucy pork chop version blends Filipino pantry favorites with tropical notes for a comforting, exciting meal.
This Hawaiian inspired recipe, with banana ketchup, pineapple juice, and a hint of vinegar, this dish offers the perfect balance of sweet and savory. Bell peppers and raisins add pops of color and contrast.

Ingredients:
Set A – Brining

8 pcs pork chops (1kilo pork)

1 tbsp salt
- 1/2 cup water
Set B – Sauce Mixture

1 cup pineapple juice
-
3 tbsp soy sauce
-
2 tbsp vinegar
-
1 1/2 tbsp banana ketchup
-
6 tbsp brown sugar
-
1 tbsp cornstarch
Set C – Stir-Fry & Simmer

Cooking oil
-
1 onion, sliced
-
3 cloves garlic, minced
-
2 star anise
-
3 laurel leaves
-
Raisins (as desired)
-
1 cup pineapple chunks
-
1 red bell pepper, sliced
-
1 green bell pepper, sliced
-
Black pepper to taste
Instructions:
Set A – Brine the Meat
- Brine porkchops with salt and water and set aside for at least 30 mins. Drain and pat dry.

Set B – Make the Sauce
1. Mix all the sauce ingredients and set aside.
Set C – Cook the Dish

Brown Pork by searing on both sides and set aside.

Sauté onion, garlic, star anise and laurel in oil.

Put back pork in the pan and pour premixed sauce and allow to simmer until pork cooked through and tender. Stir occasionally.

Add raisins (if using) and pineapple and cook for 3 minutes.

Add bell peppers and cook briefly.
