Kicking off a global culinary fusion designed to mirror the tunes of the night, the experience opened with individual plates that artfully balanced fiery heat with refreshing brightness. A punchy spicy tuna tartare with crispy garlic corn crackers. Followed by smoky grilled prawns slathered in chili butter and a sharp calamansi aioli.

The seafood highlights continued with a golden-fried Fritto Misto of calamari, shrimp, and zucchini. Served alongside cilantro aioli and local pinakurat vinegar for a sharp kick, and a flaky, traditional Empanada Kaliskis. Packed with smoked brisket, chili oil, and salsa huancaína.

Serving as the centerpiece of the course was a lavish skewer platter showcasing bold, diverse flavor profiles. Tender lamb shoulder with Szechuan chimichurri and mint yogurt. Savory pork balanced by fish sauce caramel, pickled jicama, and cured egg. Juicy kombu chicken brightened with lemon aioli and togarashi. And umbilical, earthy king oyster mushrooms glazed in sweet tare, miso aioli, and pickled ginger. Tying the entire evening together, every dish prominently featured the rare, artisanal Filipino sea salt, Asin Tibuok.

Music from ABBA, Chaka Khan, and Whitney Houston provided the evening’s soundtrack. Leaving the dance floor brimming with guests. Pairing seamlessly with the curated course, Head Bartender Martin Protacio’s precision-crafted cocktails served to heighten the club’s moody, after-dark vibe.
