The duo prepared a vibrant Spinach Walnut Pesto Pasta and a sweet-savory Miso-Glazed Salmon with Buttered Broccoli—both packed with flavor and easy enough for anyone to recreate at home. Whether you’re preparing lunch or dinner for Mom, these dishes are sure to make her feel appreciated and well-fed.
Each recipe serves four, making them ideal for a small family celebration or a weekend meal made with love.
Spinach Walnut Pesto Pasta
A Simpol twist on classic pesto—creamy, comforting, and packed with flavor.
Serves: 4
For the pesto
Tip: Blanching the spinach and basil keeps the pesto vibrant green and fresh-looking—perfect for a festive table.
Ingredients:
1 cups blanched spinach leaves
½ cup blanched basil leaves
½ cup walnuts, toasted
6 to 8 cloves garlic (adjust to your taste)
½ cup BeaOliva extra virgin olive oil
½ cup grated Parmesan cheese
1 pack Maggi Magic Sarap
Instructions:
Blanch spinach and basil in boiling water for about 10 seconds. Shock in ice water, drain, and squeeze dry.
In a blender or food processor, combine spinach, basil, walnuts, garlic, Parmesan, and Maggi Magic Sarap. Pulse until coarse.
Drizzle in olive oil while blending to form a smooth pesto. Add a splash of water if needed to adjust consistency.
For the pasta
Ingredients:
400g pasta of your choice (linguini, spaghetti, penne, etc.)
Reserved pasta water, as needed
Salt and pepper, to taste
Extra Parmesan cheese, for serving
Chili flakes (optional), to taste
Instructions:
Cook pasta in salted boiling water until al dente. Reserve some pasta water, then drain.
Toss pasta with the pesto while still warm. Add reserved pasta water gradually to loosen the sauce, if needed.
Season with salt and pepper. Serve with extra Parmesan and chili flakes if desired.
Miso-Glazed Salmon with Buttered Broccoli
Sweet, savory, and beautifully glazed—this dish brings bold flavor with a gentle touch.
Serves: 4 (1 fillet per person)
Miso Glaze Recipe
A balanced glaze that’s sweet, tangy, and deeply savory.
Ingredients:
2 tbsp white miso paste
3 tbsp honey
3 tbsp soy sauce
2 tbsp lemon juice
2 tbsp butter
½ cup water
1 tbsp mirin
1 tsp sesame oil
3 tbsp white sugar
Instructions:
In a saucepan, combine miso paste, honey, soy sauce, lemon juice, butter, water, mirin, sesame oil, and sugar.
Simmer over medium heat for 3 to 5 minutes, stirring occasionally, until thickened to a syrupy consistency. Set aside and keep warm.
For the salmon
Ingredients:
4 salmon fillets (150–180g each, skin-on or skinless)
1 pack Maggi Magic Sarap
Ground black pepper
Instructions:
Season the salmon with Maggi Magic Sarap and black pepper. Let rest for a few minutes.
Sear in a hot nonstick pan, skin-side down first, for 3–4 minutes until golden. Flip and cook another 2–3 minutes.
Spoon the miso glaze over the salmon and let it bubble and coat the fillets for about 1 minute.
Simpol Tip: You can also cook the salmon in an air fryer, oven toaster, or conventional oven—whatever works best for you. Just brush on the glaze after cooking or pop under the broiler to caramelize. But for a quick, Simpol-style prep, pan-frying is just fine. You can also sear the salmon with a blow torch for some charred flavor.
For the buttered broccoli
Ingredients:
2 cups broccoli florets
1 tbsp butter
Salt, to taste
Instructions:
Blanch broccoli in salted boiling water for 1–2 minutes until bright green and tender-crisp.
Transfer to an ice bath to stop the cooking, then drain well.
Toss with butter and a pinch of salt.
