My own love for SPAM began during weekend late nights. I would fry half a can in butter until crispy.
Then, I used the leftover SPAM-infused butter to cook cold rice into instant sinangag. This deep-fried SPAM and garlic rice became my ultimate combat meal for years. Later, SPAM Bacon added even more flavor to my routine.
From Wartime Legacy to Personal Favorite
SPAM is always written in capital letters. That feels fitting given its global impact since World War II. Made from pork shoulder, its name was coined by Kenneth Daigneau as a blend of “Spiced Ham”. Thanks to its long shelf life and durable can, SPAM was widely distributed by the U.S. military.
For nations like Korea and the Philippines, it provided a first taste of meat after the war. It was love at first bite.
Global Flavors at Public Eatery
When Public Eatery at Robinsons Magnolia announced a collaboration featuring 17 unique SPAM dishes, I went immediately. The event showcased creative recipes across Mexican, Singaporean, Japanese, and American kitchens.

First, I visited Tsuke-Men, famous for its deconstructed ramen. Their collaboration featured Carbonara Tsukemen—a rich Italian-style pasta loaded with SPAM, tossed with Parmesan, and topped with a fried egg. Dipping the noodles into the decadent broth was amazing.

Next was Lagrima, a Mexican outlet known for generous portions. I tried the SPAM Taco, layered with refried beans, egg, cheese, fresh white onions, and diced SPAM. It was messy, savory, and delicious.

Then came Mr. Fried Rice, the Singaporean concept. I ordered the SPAM Tocino Sunrise: a mound of fried rice topped with a scrambled egg and generous cubes of SPAM Tocino. The combination was beautifully balanced.
Classic American Comfort & Final Verdict
Finally, I revisited Bored & Hungry, the U.S. burger spot. I tried the SPAM Mac & Cheese, which was rich, comforting, and packed with flavor. It was so satisfying that I took a second order home for the next day.

The highlight of the event was the Hot & Spicy SPAM Smash Burger. This creation combined a SPAM-blended patty, melted cheese, a fried egg, and crispy fried onions. Every bite was rich and flavorful.
The SPAM x Public Eatery collaboration runs through the end of September. It is easily one of the culinary highlights of the year. Don’t miss out!
