The noise inside SMX Convention Center was more than applause. Knives tapped against cutting boards. Pans hissed as sauces reduced. In the middle of it all, the Manila Marriott team stepped forward, medals catching the light, raising both hands in a double “okay” — their quiet inside joke for six championship wins.

Inside the Philippine Culinary Cup

The Philippine Culinary Cup isn’t built for easy victories. It runs on strict Worldchefs judging standards — taste, technique, presentation, timing — with deductions for the smallest slip. Over three days, more than 500 chefs from over a dozen hotels and culinary teams competed across dozens of categories, from precision events like Amuse Bouche to the chaos of the Dream Team Challenge.

Winning the Overall Championship means delivering under that pressure in every discipline. For hotels, it’s proof their kitchen can hold up against the best in the country — and this year, Marriott did it for the third year in a row.


From Practice Hall to Podium

Weeks before PCC, the Marriott Grand Ballroom stopped looking like a function space. Stainless prep tables replaced banquet setups. Lidded containers lined up in perfect order. Timers beeped as chefs drilled the same dish again and again.

“It’s about knowing your station so well that nothing surprises you,” said Culinary Director Meik Brammer.

That muscle memory showed on competition day. In one high-stakes moment, Chef de Partie Jan Richard Hubilla laid the last sear on his U.S. Beef plate, cleaned the rim in one smooth motion, and handed it off with seconds left. It took gold — one of eight medals he earned on the way to being named Best Chef of the Year.

A Record Haul

The team’s medal count jumped from 17 in 2024 to 29 this year: two Highest Golds, 10 Silvers, and 17 Bronzes. More than the numbers, it was the spread that impressed — Marriott placed in categories spanning fine pastry to butchery. A pistachio mousse entremet from the pastry team drew particular praise for its precision and clean finish, earning a silver against a tough field.

“When they called my name, I thought of every late-night run-through and every teammate who caught my mistakes before the judges could,” Hubilla said. “That’s what made this possible.”

Beyond the Stage

There was no champagne spray, just quick photos, fist bumps, and then — as if on cue — talk about next year. For a team with six PCC titles, the celebration is brief. The kitchen doors will close again, timers will beep, and the drills will start.

Because in this competition, holding the cup is only half the work. The rest is making sure you get to lift it again.
