What makes this property truly special is that it sits on the original grounds of Don Tomas Morato’s old home.

During a guided tour and Q&A session at their very first media event, Mr. Chris Guballa, Managing Director of Approche Hospitality Management, shared:

We really want to front him as the center.

Everything that he built here, in this property. What he meant to the city, what he meant for the Morato family, and to the history of the Philippines.

We want to make sure what we are honoring the legacy.”

Specifically, the hotel was named to honor Don Tomas Morato, the first mayor of Calauag and Quezon City. Additionally, his namesake street was formerly known as Sampaloc Avenue. To deepen this historical connection, the hotel plans to showcase preserved family artifacts in the lobby, including a classic portrait of Don Tomas painted by The Grand Old Man of Philippine Art – Fernando Amorsolo.

Beyond its rich history, Tribute Hotel aims to be an inclusive space. Consequently, it offers pet-friendly floors and regular Tribute Acoustic Sessions featuring local live artists and bands.

The main event comes.

Relax in modern comfort and indulge in rich Asian-inspired dishes at Tribute Hotel and Don Tomas Restaurant.

The highlight of the visit was a full menu tasting at Don Tomas Restaurant, masterfully prepared by Group Executive Chef Erwin Rarugal. Meanwhile, local artist ARA provided a lovely live acoustic performance.

First, the meal kicked off with energetic appetizers. Guests enjoyed bite-sized Squid Bombs that pack a full Japanese snack experience, flavor-packed Cuapao Sliders stacked with soft barbecue pork,  carefully stacked of bursting flavors. First you get a barbecue stack of soft pork, and then be refreshed with cucumber strings that washes your tongue. Crunch meets fresh with Calamares Fritos paired with a savory ensalada, and a delightful Southeast Asian fusion of Soft Taco Mussel Sisig.

What can go wrong with a sisig-fied appetizer that brings out onion, tomato and a little spray of lime?

Next, the main entrees brought an incredible range of global flavors.

The highlights included a perfectly spiced Salmon Kimchi. The Korean palate went on kind with this one. The salmon steak welcomes a savory blanket of sauce that puts it all together. An aromatic Chicken Biryani, and a rich Nasi Goreng loaded with starchy, buttery beef satay (the meatiest feature among all). The rice lifts just the right way to balance the savour from the melty beef satay and the fresh shrimp hiding within the mountain of rice.

Similarly, comfort food lovers will adore the tender Braised Pork bathed in coconut cream.  Soft, falls in action so a little boat of security was ready to serve it warm. A tomatoey look at first, then bursts essence of shallot, garlic, turmeric, guided by the cream of coconut.

The entree also features the homey street-style Beef Rendang with hints of star anise. Special on its own simple being. And then came the rich Beef and Tendon rich in collagen, the soft-glidy meat would be no-question asked when served over hot rice.

Snack It Up, Morato!

For crowd-pleasers, there is a creamy Carbonara de Tomas topped with crunchy bacon, a classic Chef’s Burger that offers just the right bite with the meaty patty and held by the lettuce and tomato.

With Carbonara de Tomas, rather than sweet, is creamy — just slides, yet the crunch of bacon slows it down. Allowing a tender appreciation in the mouth.

Here goes a fun platter to wrap up the entree. We get windows of flavor with Garlic cheese that just alternates the spice of pepperoni flavor. Anyone could use a one on one with this.

Finally, the experience wrapped up on a sweet note with Tiramisu Matcha that roughens texture in the mouth, allowing a more matcha tongue-time. While Basque cheesecake hugs the eggful and cream. While Ube Langka mochi impersonates the traditional kakanin. With ube being the sweet star this year, this one’s an experience.

Like a modern purple reinvention of palitaw.
