The sugar dome trembled. With ten seconds left, a steady hand eased it into place. The crowd held its breath. Then—applause. At the Philippine Culinary Cup (PCC), these are the moments that define champions.
For PCC Champions LPU Laguna, precision is non-negotiable. In pastry, that means entremets that hold their shape, mousses that stay stable, and petit fours cut with surgical accuracy. In showpieces, it’s tempered chocolate that resists the heat and isomalt that stays crystal clear. On the hotline, it’s rhythm: season once, fire in sync, plate on the call.

Discipline Beyond the Plate
International contests raise the bar at home. The team drills cold-chain handling for delicate elements, rehearses on-site builds until every move is muscle memory, and adapts instantly when ingredients shift. Judging sheets are studied line by line; every note becomes a new drill. Travel prep is part of training—packing lists, tool control, and backup menus for unfamiliar produce.

First Crown, Lasting Standard
That readiness paid off in 2016, when LPU–Laguna claimed its first PCC crown. Dr. Abram Emmanuel R. Peralta, Executive Dean of CITHM, still remembers the split-second of silence before the announcement—then an eruption of cheers.
“We were up against schools that had competed for years,” he says. “When our name was called, it changed everything.”
Since then, they’ve earned over 200 medals, including Best Pastry Chef titles for Dr. Peralta in 2016 and Chef Nelson Gamurot in 2024. Alumni have claimed ten Highest Gold wedding cake medals, with graduates now leading pastry teams at Marriott, Hilton, and beyond.

Behind the wins is a system of timed runs, sharp debriefs, and relentless repetition. Coaches track plating times, grade texture and temperature, and push until every movement is automatic.

PCC as the Ultimate Test
For LPU–Laguna, PCC is a litmus test for real kitchens. Cold Kitchen runs in near silence—just knives on boards and the clean snap of chocolate cooling—while live rounds demand service within fixed windows. Judges assess not just flavor, but workflow: knife safety, board hygiene, reheating discipline, and clean station breaks.
That discipline reshapes classroom work. Students learn to write tasting notes with objective language, calibrate seasoning, and recover fast when a component fails.
One student recalls a lesson drilled in early: “It’s not just about fixing mistakes—it’s about doing it so fast the diner never notices.”

WOFEX: A Global Gateway
The PCC arena unfolds in the middle of WOFEX, the country’s largest food and beverage trade show. The clink of tasting spoons mixes with the low hum of international voices. Espresso machines hiss in the distance. Judges fly in from around the world. Visitors wander in from other countries.
Cake decoration here demands absolute focus. From Lambeth piping to hand-painting and sculpting, every motion counts. A single tremor or change in temperature can undo hours of work.
This mix of local training under world-class standards produces champions ready for any stage. By the time PCC Champions LPU Laguna competes overseas, they’re not just prepared—they’re primed to excel.

Taking Gold Abroad
At FHA Singapore 2025, the team scored 98 points—the highest gold medal—in the Themed Cake category with a towering sugar-and-chocolate Philippine eagle in mid-flight, perched above sugar orchids and native flora.
They also took Gold with Distinction at the Battle of the Pastry and Bakery Chefs in Penang, Malaysia, alongside strong placements in showcase events such as Amuse Bouche. These weren’t just medals—they were proof that PCC discipline travels.

A Wedding Cake Record
The 2024 PCC wedding cake competition became another landmark. “We joined with two cakes—The Chinese Pagoda and Blessed by the Indian Gods—and both won Gold,” Dr. Peralta recalls. The latter earned the highest score ever for a PCC wedding cake: 98 points and ₱100,000 from Peotraco.
That score came after a month of meticulous work. The bold green-and-gold design paid tribute to Indian culture. Chef Hannah Onrubia sculpted the Elephant God Ganesha as if emerging from the cake, blessing newlyweds in celebration. The surface was alive with detail: 3D embossed painting in royal icing, precision stringwork, and Lambeth piping at a scale so fine it could only be done by hand.
“Master difficulty. Make it look easy.”

Rules They Live By
For every competitor, three values matter most: Never accept defeat; even in loss, you gain. Stay humble; skill opens doors, humility keeps trust. Keep faith at the center.
“These aren’t just competition rules—they’re life rules,” Dr. Peralta says.
Staying Sharp
“The hardest part about being on top is staying on top,” Dr. Peralta says.
This year, PCC Champions LPU Laguna will not compete at the Philippine Culinary Cup. Instead, they’re focused on three international contests—FHA Singapore, SFH Korea, and one in Malaysia—to raise the Philippine flag on the global stage.
“We feel this is the time for others to shine here at home,” Peralta says. “We’ll still be there—judging, mentoring, and cheering on PCC. In 2026, we’ll be back.”
For now, training continues. Veterans coach rookies, test new menus, and push the pace. The goal is the same: stay sharp, aim high, and deliver under pressure—wherever in the world the kitchen may be.
