Designed to accommodate approximately 130 guests, Seafood 8 by Olio’s brings the dramatic energy of a bustling seafood market into a sleek, modern space. The venue features live seafood, fresh displays arranged on ice, and an open kitchen. This setup creates an immersive experience where diners can see, hear, and anticipate each dish as chefs prepare it.

The Magic of Eight Signature Sauces
Flavor takes center stage through the restaurant’s defining feature. Eight signature sauces. Where each is specifically crafted to highlight the best in every dish. Guests can tailor their dining experience by pairing their fresh seafood selections with a vibrant mix of global and local flavors.
Ranging from citrusy classics like Kalamansi Hollandaise and Inasal Citrus Ginger & Soy. To rich, savory options such as Miso Butter and Olio’s Chili Supreme XO Sauce. For those craving bold spice or a touch of sweetness, the kitchen also offers Chili Caramel. Asian Sweet and Sour Sauce, Latin Chimichurri, and a fiery Gambas Roja.
Global Roots, Local Passion
The restaurant is the vision of Chef Oliver “Oli” Buenviaje. A Filipino culinary talent whose career spans some of the most respected kitchens in Australia and around the world. Seafood 8 by Olio’s marks his first restaurant venture in the Philippines.
Seafood has always been at the heart of my culinary journey,” said Chef Buenviaje.
Born in Sorsogon, Chef Buenviaje relocated to Australia as a teenager. He later pursued a global culinary career that took him to world-renowned establishments. Including Alain Ducasse’s Le Meurice in Paris, Al Mahara at Dubai’s iconic Burj Al Arab, Le Normandie at Mandarin Oriental Bangkok, and Caprice at Four Seasons Hong Kong.
Seafood 8 by Olio’s is my way of celebrating the incredible seafood we have in this country while presenting it through the lens of everything I’ve learned around the world.”
Eventually, he founded Olio’s Fine Food Catering in Perth. Serving high-profile clients and building a strong reputation for refined dining experiences.

Honoring Tradition and Generosity
Despite his international achievements, the core inspiration behind the restaurant remains distinctly Filipino.
Filipinos love seafood, and we love sharing meals,” Chef Buenviaje added.
Chef Buenviaje attributes much of his hospitality philosophy to his late grandfather, Jose Aviles. Who taught him the value of generosity, community, and sharing meals.
