For a Simpol Filipino dish that manages to feed both a tight schedule and a hungry soul, Ginataang Monggo with Langka is precisely that kind of mid-week hero.Â
A humble duo of mung beans, and tender young jackfruit simmered in rich coconut cream for some clean, velvety flavor. From modest pantry staples and a few effortless fresh tweaks, its deep and soulful comfort makes practicality taste like home.

Ingredients:Â
Set A:Â ToastingÂ
- 1 cup mung beans

Set B: SimmeringÂ
- 2 cup coconut milk
- 1 ½ cup glutinous riceÂ
- Pinch of saltÂ
- 1 cup water
- 100-200g langka(jackfruit)Â

Set C. Finish
- 1 cup white sugarÂ
- 3 cup coconut milk Â
Procedure:
- Toast the mung beans until the aroma comes out and browns in color. Use mortar and pestle to crack the mung beans or you can also blend. Set aside.
- In a pot add coconut milk, glutinous rice, salt, cracked mung beans and water in a medium heat. Stir well, for 5-8 minutes then add langka for another 10-15 minutes.
- To finish the dish, add white sugar and coconut milk, stir for another 3-6 minutes then serve and enjoy.
Simpol Cooking Notes:Â
- Dry-toast the mung beans in a pan without oil before cooking. This enhances their natural aroma, develops a deeper nutty flavor, and adds more complexity to the dish.
- After toasting, crack the mung beans using a mortar and pestle or a blender. This helps them cook faster, break down more easily, and create a smoother, creamier consistency.
- Don’t forget to season with salt. A small amount of salt balances the natural sweetness of the coconut milk and jackfruit while enhancing the overall flavor of the dish without making it taste salty.Â
- Cook the glutinous rice and cracked mung beans together to ensure they soften evenly and achieve a rich, creamy texture at the same time.
- Jackfruit is a great addition for its natural sweetness, delicate aroma, and soft texture. You can also customize the dish with other ingredients that pair well with coconut milk, depending on your preference.Â
Serve it piping hot on a rainy afternoon or chilled straight from the fridge for a comforting snack. However you choose to enjoy it, this humble Filipino dish is a gentle reminder that the best kind of comfort food doesn’t need to be complicated. Just cook it the Simpol way—but with a lot of heart.
