For that classic Pinoy comforting meal during the rainy season, nothing tops a good-old goto. Whether you’re missing home, or just simply feeling under the weather, a simple hot bowl of this dish can make you feel instantly better.

Ingredients:

Set A: Broth
- 300-500g tripe(beef stomach)
- 300g pork ruffle fat (bulaklak)
- 300g pork rectum (tumbong)
- 1 thumb-size ginger, crushed
- 1 large onion, quarts
- 1 whole garlic, crushed
- Water for boiling
- Salt to taste

Set B: Saute and simmering
- 2 tbsp oil
- 3 red onions, minced
- 1 ginger, minced
- 3 cloves garlic, minced
- 1 cup glutinous rice
- 1 cup regular rice
- Salt to taste
- Water for boiling
- 15g maggi magic sarap
- ½ cup kasubha
Set C: Toppings
- Fried tofu
- Hard Boiled Eggs
- Spring onion, chopped
- Fried garlic
- Calamansi
Procedure:
- In a pot, add all ingredients, pressure cook for 20-35 mins until soft and tender. Set aside.
- In a pot, saute aromatics in oil until aroma comes out. Add the rice mixture and season with salt, saute for 2-3 minutes then add water, and maggi magic sarap. Gradually add more water, beef and pork innards and mix the goto. Then finally, add the kasubha for a yellowish goto.
- Serve and top your goto on your preferred toppings.

Simpol Cooking Notes:
- Thoroughly clean the pork and beef innards before cooking. Rubbing them with salt and baking baking soda and rinsing well helps remove impurities and unwanted odors. You may also use vinegar or calamansi juice as natural cleaning agents.
- Simmer the innards until tender before adding it to the dish. Use a pressure cooker to tenderize the meat and ensure a softer texture and a more enjoyable eating experience.
- Combining regular rice with glutinous rice creates a well-balanced porridge. The regular rice provides structure, while the glutinous rice gives the goto its rich, creamy consistency.
- Saute the rice mixture with the aromatics before adding the broth. This lightly toasts the grains, enhancing their flavor and helping develop a richer, more aromatic porridge.
- Add kasubha to give the goto its vibrant golden color and subtle floral aroma.
