Introduction

In every Filipino home, fried chicken has always been a favorite—simple, comforting, and timeless. It reminds us of Sunday lunches with family, merienda at karinderya after school, and even special celebrations. This version, inspired by the old-school Max-style fried chicken, is tender inside and golden crispy outside.

The secret? A flavorful poaching liquid that gently cooks the chicken before deep frying. This ensures every bite is juicy, savory, and never dry. It’s the kind of dish that proves how Filipino cooking is always about patience, love, and making the most of what you have in your kitchen.


Crispy Kanto-Style Fried Chicken Recipe

Ingredients
  

Set A: Marinade

  • 1 kilo chicken leg quarters whole
  • 2 tablespoons calamansi juice
  • 1 tablespoon fish sauce
  • 1 teaspoon ground black pepper

Set B: Poaching Liquid

  • 6 cups water
  • 1 onion quartered
  • 4 cloves garlic crushed
  • 2 bay leaves
  • Leftover marinade from Set A
  • 1 seasoning pack or bouillon cube

Set C: For Frying & Serving

  • Oil for deep frying
  • Salt to sprinkle
  • Banana ketchup Worcestershire sauce, and hot sauce for dipping

Instructions

Set A: Marinate the Chicken

  1. Score chicken skin lightly to avoid curling.
  2. In a bowl, combine calamansi juice, fish sauce, and black pepper.
  3. Rub mixture over chicken and let marinate for at least 1 hour, or overnight for best flavor.

Set B: Prepare the Poaching Liquid

  1. In a pot, bring water to a boil with onions, garlic, bay leaves, seasoning pack, and the leftover marinade.
  2. Reduce to simmer and carefully add chicken.
  3. Cook gently for 12–15 minutes until chicken is tender but not falling apart.
  4. Remove and drain chicken. Set aside stock (great for making soup or sauce later).

Set C: Fry the Chicken

  1. Heat oil in a deep pan over medium-high heat. Test with a wooden spoon—if bubbles form, oil is ready.
  2. Fry chicken in batches to avoid overcrowding. Cook 4–5 minutes per side until golden brown and crisp.
  3. Drain on rack or paper towels. Sprinkle lightly with salt.

To Serve:
Plate the fried chicken with sweet potato fries or rice. Serve with banana ketchup mixed with Worcestershire sauce and hot sauce.
