CEBU-STYLE STEAMED FRIED RICE

Serves 2 to 4. 

For the Rice:


INGREDIENTS:

 Set A: 

  • 5 cups day-old rice
  • 2 tablespoons soy sauce 
  • 2 eggs
  • 2 tablespoons cooking oil

For the Pork & Shrimp Stew:

 INGREDIENTS:

  • 400 grams pork kasim, cut into small cubes

Set A:

  • 2 tablespoons cooking oil
  • 1 tablespoon garlic, minced
  • 1 piece onion, mince  
  • 5 cups water

Set B:

  • 5 tablespoons cornstarch (slurry)
  • 3/4 cup water (slurry) 
  • 4 tablespoons soy sauce 
  • 1 tablespoon sugar
  • 1 tablespoon ginger juice
  • ½ cup frozen sweet peas
  • 1/2 cup small shrimps, shelled
  • 1/2 teaspoon black pepper
  • Salt, to taste
  • 2 tablespoons sesame oil
