This year, it will host nearly 1,000 competitors and 45 judges, including 49 foreign-certified culinary professionals. All entries will be evaluated under international standards.
“Many of the products you see on the show floor aren’t in the local market yet,” says PCC co-founder Chef James Antolin. “By bringing them into the competition kitchens, we let chefs experiment, innovate, and show what’s possible.”
Here, ingredients like Norwegian salmon and Taiwanese pork are tested in real kitchen scenarios. Buyers watch them perform under pressure before making purchasing decisions. Producers gain a live showcase of versatility, value, and market fit.
