The Grand Hyatt Metro Manila consistently delivers top-tier luxury. Ever since its opening, the hotel has set a high benchmark for fine dining. Guests experience this excellence everywhere, from the expansive Grand Kitchen to The Peak on the 60th floor. Naturally, visiting this destination feels like a special occasion that demands one’s best attire.
A Grand Tradition and Signature Specialty
For over seven years, No. 8 China House has built a stellar reputation around its iconic Peking Duck. The slow-roasted duck remains the restaurant’s ultimate signature dish. Uniquely, servers present the crispy skin with a light sprinkle of white sugar. While this traditional pairing seems unusual at first, it creates an irresistible flavor that keeps guests coming back.
A Refreshed Spectrum of Cantonese Delicacies
Recently, the restaurant introduced a refreshed menu celebrating the depth and diversity of Cantonese cuisine.

To start, the kitchen paired Preserved Egg with Fried Green Peppers alongside Cold Yam with Blueberry Sauce. The century egg offers a creamy texture complemented by smoky green peppers. Meanwhile, the crisp Chinese yam features a vibrant, fruit-forward blueberry dressing.
Next came two exquisite seafood creations.

First, the Steamed Green Grouper with Cordyceps Flower highlighted delicate white fish with subtle earthy notes. Afterwards, the host served Steamed Green Crab with Pork and Onion, expertly removing every piece of shell for effortless dining. Subsequently, the chef presented a bold Hot and Sour Boiled Angus Beef with Mushroom. This dish delivered a fiery, broth-based punch inspired by Sichuan flavors.
The Iconic Mains and a Grand Finish
Following the starters, the centerpiece Peking Duck returned to the table.

First, guests enjoyed the crispy, aromatic skin on its own. Afterwards, the chef wrapped tender meat and skin into delicate pancakes with rich hoisin sauce.

Next, the striking Braised Dongpo Pork arrived. Artisans slice the pork belly by hand and assemble it into an eye-catching pyramid before pouring a rich sauce tableside.

Ultimately, this meal offered a memorable journey through authentic Cantonese craftsmanship. Although lunch finished around half-past two, the generous dishes kept everyone satisfied well into the evening. Consequently, No. 8 China House continues to define grand hospitality in Metro Manila.
