Few Filipino dishes spark as much pride, and history as Kare-Kare. This rich, comforting oxtail and vegetable stew coated in a velvety, orange-hued peanut sauce is fundamentally tied to the Filipino identity. Frequently and traditionally served for town fiestas, birthdays, and Sunday family gatherings. 

But with MAGGI Magic Sarap, this classic Filipino dish can be served in a different tone. Brighter, more comforting, and convenient for the Filipino homes. With a unique touch of ground pork, Kare Kare has never been better—and simpler. 

INGREDIENTS
Set A: Sear, saute & simmer

  • 500g ground pork
  • ½ all purpose flour
  • 3 cloves garlic 
  • 1 large red onion 
  • ½ cup bagoong alamang
  • ½ cup annatto oil 
  • 1 tbsp fish sauce
  • 1 cup peanut butter
  • 2-3 cups water
  • 1 tbsp soy sauce 
  • 1 sachet maggi magic sarap

Set B: Vegetables

  • 3 tbsp oil, divided
  • 1 eggplant, cubed
  • 1 bunch string beans, sliced in ½ inch 
  • 1 bunch pechay, sliced
  • 1 sachet maggi magic sarap, divided

Set C: Finish

  • 1 tbsp toasted garlic, for garnish

PROCEDURE

With MAGGI Magic Sarap, this classic Filipino dish can be served in a different tone.

A. Sear, saute & simmer

In a pot add the ground pork in medium heat, add all-purpose flour, and mix for 5 minutes. Then, add garlic, onion, bagoong alamang, annatto oil then season with patis. Next, add peanut butter, water, let it simmer for 5-10  minutes then add soy sauce for a pop of color and add MAGGI Magic Sarap for a linamnam flavor. Lastly, let it simmer for another 10-15 minutes.

Brighter, more comforting, and convenient for the Filipino homes. With a unique touch of ground pork, Kare Kare has never been better—and simpler.

B. Vegetables

Start with adding 1 tbsp oil on your pan, and fry vegetables separately then season with MAGGI Magic Sarap. Set aside.

C. Finish

Lastly, turn off the heat, serve with rice. Then, sprinkle with fried garlic and enjoy!

  • Adding flour to ground pork helps bind also known as Build- in sauce thickeners that become fond. 
  • Peanut butter can be used as a natural thickener, making sauces creamier while adding a rich, nutty flavor.
  • Scraping the browned bits (fond) from the bottom of the pan adds depth and richness to the dish, as these caramelized bits are packed with flavor.
  • A few drops of soy sauce can naturally enhance the color of almost any dish, giving it a richer, more appetizing appearance.
  • Cooking vegetables separately helps prevent them from overcooking, keeps their texture and color, and can help extend the dish’s shelf life by reducing the chance of spoilage.
