A Kitchen That Moves with Intention

Executive Chef Luis Chikiamco has been with the Discovery Group for over 15 years, but his move to Discovery Primea was a turning point. “I was scared at first,” he admits. “But it challenged me to grow. To keep learning.”

His approach is quiet but firm. “We want Flame Restaurant to be approachable.” he says. “The food is sophisticated, but familiar. We want our guests to experience our take on certain dishes and think, ‘I know this flavor.’ That’s what makes it comforting.”

For Chef Luis, evolution doesn’t mean chasing trends — it means refining what already works. “Every year, things shift. Palates change. I adapt. But the question stays the same: What will feel right for our guests?”

He also credits his team. “They’re the heart of the kitchen. Without them, the story I try to tell isn’t complete. My success is as much theirs as it is mine.”

A Menu That Lets the Ingredient Speak

That evening, the tasting menu featured Canadian AAA beef. Not as a showpiece, but as a thread — tying together the restaurant’s core values: restraint, clarity, and technique.

It began with beef tartare — lean, bright, topped with a crisp tendon chip that added salt and crunch without overwhelming the flavor. Then came the standout: a bowl of clear, warming broth with short plate, mushroom gyoza, and vegetables. Flame’s take on phở didn’t reimagine the dish — it focused it. We found ourselves imagining garlic rice on the side. The thought felt right.

Later, a braised short rib arrived. Tender, intact, resting on celeriac purée with spring vegetables. No richness for the sake of it. Just balance.

The beef itself wasn’t as marbled as many Filipino diners might expect. But it was more flavorful—and just as tender. “It’s not too fatty, but still tender,” says Chef Luis. “It has a deep beef flavor and a nice mouthfeel. The different cuts allow us to show different techniques and pairings.”

Every course knew what it wanted to be — and left nothing on the plate that didn’t belong.

Lunch: 11:30 AM – 2:30 PM
Dinner: 6:00 PM – 10:00 PM
