Foundation Forged in Global Luxury
Norbert’s distinguished career began in Paris, France. Where he established a robust foundation in luxury hospitality at the five-star Hôtel de Crillon. He further honed his fine-dining expertise in New York City at the acclaimed, three-Michelin-starred Le Bernardin.
Moving into international hotel management, he later relocated to Australia. Serving as the assistant operations manager for Glass Brasserie at the Hilton Sydney.
Cultivating Roots in the Philippine Hospitality Scene
The most expansive and defining chapter of Norbert’s career began in the Philippines. Starting with a pre-opening consultancy for Brasserie Cicou. Over the subsequent fourteen years, he built a reputation as a highly respected leader within the country’s competitive luxury hospitality sector.
At Sofitel Philippine Plaza Manila, Norbert progressed through several senior food and beverage leadership roles before his promotion to director of food and beverage. In this capacity, he directed the hotel’s landmark dining venues. Including the famous Spiral buffet.
Following this tenure, he served as the cluster director of food and beverage for Swissôtel Clark and Widus Hotel Clark. Where he successfully spearheaded pre-opening initiatives, banquet services, and day-to-day culinary operations.

Bridging Cultures and Empowering Teams
Having resided and worked in the Philippines for more than a decade, Norbert credits his deep understanding of local culture and the domestic hospitality market as one of his greatest professional assets. This localized insight, paired with his extensive global background. It has shaped a leadership philosophy that seamlessly integrates international standards with authentic Filipino hospitality.
In his new role at Dusit Thani Manila, Norbert will oversee the hotel’s diverse array of restaurants and bars. This portfolio includes the property’s Michelin-guide-recognized specialty outlets, Benjarong and UMU, as well as its popular all-day dining restaurant, The Pantry.
Additionally, he will manage the hotel’s busy banquet operations. A premier venue for milestone social and corporate events in the metro—while playing an active role in refining the property’s overall beverage program.
