 Serves 3 to 4.

 INGREDIENTS:


Set A:

  • 4 pieces chicken leg quarters or 1 kilo assorted chicken cuts
  • 4 tablespoons fish sauce
  • 1/2 cup vinegar
  • 3/4 cups water
  • 6 cloves garlic, crushed
  • 1 teaspoon whole black pepper
  • 4 pieces laurel leaves

 Set B:

  • Cooking oil, for frying

For the Adobong sili:

Ingredients:

  • 1/4 kilo finger chili (siling pansigang)
  • 1 head garlic, peeled and chopped
  • 1 piece onion, chopped
  • 1/2 cup vinegar
  • 1/4 cup soy sauce
  • 1/2 cup water
  • 1 teaspoon sugar (optional)
  • 1/2 teaspoon peppercorns, crushed
  • 2-3 pieces laurel leaves
  • Cooking oil (from fried chicken)
  • Salt, to taste
