Chef Tatung anchors that message through six live culinary presentations at the Philippine Pavilion, drawing from his recent book, Pinas Simpol.

More than a cookbook, Pinas Simpol codifies what he calls the Four Legs of the Filipino Table—Rooted, Resilient, Respectful, and Responsive—a framework that explains the structure and depth behind Filipino food. Through this lens, the presentations go beyond flavor. They clarify how geography shapes ingredients, how history informs technique, and how communal dining defines Filipino hospitality.

From adobo layered with native vinegar to seafood enriched with coconut milk and citrus, each dish prepared from Pinas Simpol serves as an entry point into regional travel experiences—coastal traditions, public markets, farm visits, and heritage dining across the Philippines.

Positioning Filipino Cuisine at the Heart of Global Tourism

Chef Tatung’s participation builds on his previous international representations at Madrid Fusión in Spain and Village International de la Gastronomie in France. At ITB Berlin, however, the focus sharpens on tourism—presenting Filipino food not as an isolated culinary showcase but as an essential part of the Philippine travel narrative.
