For Filipinos, a meal without rice isn’t just incomplete, it’s practically a culinary offense. And when the craving for comfort hits, nothing reigns supreme quite like a steaming bowl of sinigang, its sharp, tamarind-induced sourness cutting through a rainy day.
But what happens when you take these two absolute titans of the Pinoy dining table and melt them into one? The Simpol Kitchen and MAGGI Magic Sarap did the unthinkable. Completely reimagining the country’s top-tier soup and staple grain into a single, comforting bowl of porridge. Intrigued? You should be.
INGREDIENTS
Set A: Preparing the broth
- 3 cups water
- 1 tbsp oil
- Reserved shrimp heads and shells
- 1 small red onion, quartered
- 1 tsp salt
Set B: Sauteing
- 1 tsp oil
- 1 thumb-sized ginger, minced
- 1 medium red onion, minced
- 4 cloves garlic, minced
- 1 cup rice (regular or glutenous)
- Salt to taste
- 2 tomatoes, minced
Set C: Simmering
- 5-6 cups shrimp stock
- 1 tbsp fish sauce
- 1 radish, minced
- 1 tbsp maggi magic sarap
- 2 cups water
- 1 bunch string beans, cut into ½ inch piece
- 10g maggi magic sinigang sampalok mix
- 200g shrimp, peeled and deveined
Set D:
- Fried garlic, garnish
PROCEDURE
A. Preparing the Broth
To prepare the broth, bring water to a boil. In a different pot saute shrimp head and shells until aroma and color comes out. Add the onion in boiling water then transfer the shrimp head and shells, let it boil for 2-3 minutes.

B. Sauteing
In a pot you saute the shrimp head, add oil and saute, ginger, onion, garlic and rice for 2-3 minutes. Season with salt then add the minced tomato.
C. Simmering
Gently add the shrimp stock, let it simmer for 2-3 minutes. Season with fish sauce, radish, maggi magic sarap, and water, stir and let it simmer for another 3 minutes. Add string beans, maggi sinigang sampalok mix, and shrimp.

D. Finish
Turn off the heat, serve and top with fried garlic and enjoy.

- Do not discard the shrimp heads and shells, as they can be used to prepare a flavorful broth that enhances the natural taste of the shrimp.
- Incorporate ginger into seafood dishes to help bring out the seafood’s natural flavor while minimizing any strong fishy aroma.
- Sauté the rice before adding the liquid to lightly toast the grains, enhancing their aroma and contributing to a richer flavor.
- Stir the lugaw continuously during cooking to prevent the rice from sticking or scorching at the bottom of the pot and to achieve a smooth, creamy consistency.
- Add water gradually throughout the cooking process to maintain the desired consistency and ensure a creamy, well-balanced texture.
