Michelin-recognized chef Jereme Leung is returning to Conrad Manila this April for a limited-time culinary showcase, bringing with him a distinctive multi-course tasting menu that highlights modern Chinese cuisine with refined regional roots.
From April 22 to 30, Conrad Manila welcomes back Michelin-recognized chef Jereme Leung to take over the kitchen of China Blue by Jereme Leung, the luxury hotel’s award-winning flagship restaurant, offering a meticulously curated dining experience featuring ingredients sourced locally and across East Asia. The showcase marks Leung’s highly anticipated comeback to the Philippine dining scene, in partnership with Philippine Airlines, the official airline sponsor for the event.
Known for his “East-meets-West” culinary philosophy, Leung has long been considered a pioneer in modern Chinese cuisine. His latest menu exemplifies his ability to reimagine tradition with sophistication and flair — evident in standout dishes such as slow-cooked duck leg glazed with pickled olive soy, and seared U.S. scallops resting on a bed of spinach egg custard.
“Returning to Conrad Manila is truly special,” Leung said in a statement. “I am excited to present dishes that merge traditional Chinese culinary techniques with innovative modern approaches. Each element is chosen with care, with the collective purpose of taking diners through a deeply immersive and memorable experience that celebrates the richness of Chinese cuisine.”

The menu, priced at P6,588 nett per person, includes an elaborate lineup:
Appetizers include suckling pig stuffed with black glutinous rice and salted egg; deep-fried sea cucumber and shrimp with taro in spicy hawthorn sauce; and marinated dehydrated vegetables with century egg and porcini mushroom sauce served in a crispy tube.
The soup course features a slow-boiled yellow croaker broth with water bamboo shoots and black fungus.
For the main course, guests can savor slow-cooked duck leg in a pickled olive dark sweet soy glaze; steamed spinach egg custard with seared scallops in dry scallop and pickled ginger sauce; and poached flat noodles tossed with fresh crab meat, fragrant shallots, and spring onion sauce.
The experience concludes with a whimsical dessert: a chocolate tree with pandan sponge and raspberry ice cream.
