Classic Chicken Pork Adobo

Adobo is a common dish that can be found in most households because of its simple way of cooking. The ingredients used in the recipe are also cheap and easily available in most markets, making it a dish that can be cooked at any time.

There are many different versions of adobo throughout the Philippines, with flavor profiles ranging from savory, sweet, and tangy. Each household has their own preferences, so there may even be instances where the ingredients may differ, but this recipe can be considered one of the classic variations of the well-loved adobo.

Ingredients

Salt, for marinade
1/2 kg. pork belly
1/2 kg. chicken pieces
Cooking oil
1 whole garlic, crushed
2 pcs. onion, chopped
1/2 cup white vinegar
1/2 cup soy sauce
1 pack Maggi Magic Sarap
1 -2 Tbsps. brown sugar
5 pcs. laurel leaf
1 tsp. whole peppercorns
1 tsp. cracked black pepper
1/2 cup water

Instructions

  1. Prepare the pork and chicken. Season them with salt at least an hour ahead.
  2. In a pan, heat the oil. Sauté the garlic, onion, and pork belly. Toss them all together. Add the vinegar, soy sauce, brown sugar, Maggi Magic Sarap, laurel leaves, whole and cracked peppercorns, and water. Cover and let it simmer for 10 – 15 minutes.
  3. After letting the pork cook, add the chicken. Cover and leave it to cook for another 30 minutes.
  4. When it is halfway cooked, lower the heat to medium heat and leave it to simmer to let the sauce reduce further.

With this recipe, whether your household is divided between their like for either pork or chicken, no one will fight because this Classis Chicken Pork Adobo has both. Not only does it have two kinds of meat, its delectable sauce is also so flavorful that it can coat the rice.
