Belmont Hotel Manila has launched Pamana, a weekend buffet highlighting Kapampangan cuisine, in celebration of Filipino Food Month.
The buffet, curated by chef and entrepreneur Felix Niño Asuncion, features traditional dishes from Pampanga, a province widely regarded as the culinary capital of the Philippines. The event runs every Friday and Saturday in April, from 6:30 to 9:30 p.m. at Café Belmont.
“Pamana is more than just a meal — it is the story of who we are as Filipinos,” Asuncion said in a statement. “Each dish we serve honors the hands that came before us, the land that has nourished us and the memories that continue to shape us.”
Asuncion, chief executive of Asuncion Family Ventures Inc., was recently recognized as Asia’s Visionary Leader in Empowered Entrepreneurship. He is also the founder of Asuncion Private Dining and the author of Always Forward: The Story of Perseverance.

Pamana, which translates to “heritage,” showcases signature Kapampangan dishes prepared with heirloom recipes and locally sourced ingredients. Highlights include Asadong Matwa, a sweet and savory pork stew slow-cooked using traditional methods, and Begukan Babi, a pork dish simmered in bagoong, a fermented fish paste known for its robust, umami flavor.
The buffet emphasizes sustainable practices, with ingredients sourced from Filipino farmers and producers, and efforts to reduce food waste. Organizers said the initiative supports local communities and helps preserve culinary traditions.
“Each plate tells a story of Kapampangan identity, resilience and innovation,” Asuncion said.
The Pamana buffet is part of the hotel’s broader efforts to promote Filipino culinary heritage and offer guests an immersive dining experience. Reservations are recommended.
