Nothing is better than a serving of Beef Kare-Kare during the colder and rainy months. Pair it with the bagoong of your choice, whether spicy or not, and enjoy every bite with a spoonful of freshly cooked rice.

Make sure to cook the beef until it has softened to fully enjoy the experience. Slurp the decadent meat off the bone, and savor the crisp vegetables, both of which has absorbed the mouthwatering meaty broth.


Ingredients

1/2 kg. beef brisket (oxtail, tripe)
1 pc. white onion
Water
Cooking oil
1/2 cup glutinous rice flour
1 pc. onion
5 pcs. garlic
5 Tbsps. annatto oil
3 Tbsps. peanut butter
1 Tbsp. ground peanuts (optional)
2 Tbsps. brown sugar
3 Tbsps. fish sauce
1 bunch string beans
3 pcs. eggplant
1 pc. banana heart

Instructions

  1. In a pot, add the beef brisket, white onion, salt, and water. Cover and let it come to a boil.
  2. When it starts boiling, remove the scum that is rising to the top. Cover and continue to let it cook. Once it has softened, and all the scum has been removed, leave it to cool.
  3. In a pan, heat the oil. Sauté the rice flour until it becomes brown. When it has browned, add onion, garlic, annatto oil, the cooked beef with the stock, peanut butter, crushed peanuts, and brown sugar. Mix well.
  4. When it starts simmering, season with patis. Add the string beans, eggplant, and banana heart.

While you may need to spend some time to make the meat as soft as can be, the unforgettable flavors of the Beef Kare-Kare will surely be worth that extra effort. Make sure to cook rice when you make this, so you can enjoy this perfect pair.
