Michelin is coming back to the Philippines. And while its inspectors are looking more closely at local ingredients and culinary traditions, chefs are facing another reality behind the kitchen door: running a restaurant keeps getting more expensive.
The Michelin Guide will reveal its 2027 selection for Manila and Environs and Cebu on October 29 at the Manila Marriott Hotel at Newport World Resorts. Now in its second year here, Michelin is returning to familiar ground while expanding its search across more areas of Manila’s environs.
The inaugural selection recognized 108 establishments. Among them were one two-star restaurant, eight one-star restaurants, 25 Bib Gourmand establishments, and 74 Michelin Selected restaurants.
This year, Michelin says inspectors are seeing greater consistency and closer attention to local ingredients and culinary history. The guide has specifically highlighted calamansi, kamias, and tamarind, alongside native spirits, tropical fruits, coffee, spices, and herbs.
Putting Filipino Ingredients in the Spotlight

For Filipino chefs, that recognition carries significance. For years, many of these ingredients were familiar to local diners but needed explaining to international guests. Now, they are increasingly becoming part of the conversation around Filipino cuisine.
Calamansi, kamias, and tamarind may be everyday ingredients, but chefs are finding new ways to use them. In turn, these ingredients can become a way to showcase Filipino flavors while telling stories about local food traditions.
Beyond the Stars

Still, recognition is only one part of the restaurant story. Behind every carefully plated dish is a kitchen dealing with rising costs, staffing needs, equipment, utilities, and the everyday demands of running a business.
So as Michelin returns, the conversation goes beyond stars and selections. It also looks at the people working behind the scenes and what it takes to keep a restaurant operating.
The 2027 selection will put Filipino dining back in the spotlight. But behind that spotlight are chefs and teams continuing to build, cook, adapt, and keep their kitchens moving.
