A scrumptious dish from the beautiful province of Cebu, the hometown of Chef Tatung. With this dish, he lets you get a taste of the food he enjoyed while growing up. Savor each bite and have a glimpse of what it is like growing in the South.

Every spoonful of collagen-rich meat melts in your mouth, coating your taste buds with a chewy yet soft texture. Slurp the meat off the bones and watch as the sauce seeps into the rice, coating every grain with a mouthwatering burst of flavor.


Ingredients

1 pc. pata ng baka
5 pcs. ginger, sliced
2 pcs. onion
1 Tbsp. whole black pepper
Sibot and salt

For the Sauce:
Oil, for sautéing
2 Tbsps. annatto oil
1 pc. onion, minced
1 pc. red bell pepper, sliced
3 pcs. red chili
Cooked pata ng baka
1 Tbsp. salted black beans

Stock
1/2 cup water
2 sachet Maggi Magic Chicken Cubes
1 small can liver spread
1 cup tomato sauce
3 pcs. green chili
1 Tbsp. fish sauce
Black pepper, to taste

Instructions

  1. In a pressure cooker, add the beef trotters, ginger, onions, black pepper, salt, and sibot. Leave it to cook for 45 minutes until it becomes close to tender.
  2. While waiting for the beef trotters to cook, prepare the other ingredients. Slice the red bell pepper, and dice the garlic and onion.
  3. In a wok, heat the vegetable oil and annatto oil. Sauté the garlic and onion. Add the red bell pepper. Toss it all together. Add the red chilies, then transfer the beef trotters into the wok. Toss,
  4. Then add the salted black beans. Strain the broth into the wok. Add water. Season with Maggi Magic Chicken Cubes, then add liver spread and tomato paste. Leave it to simmer.
  5. Once it starts to simmer, add the green chilies and ginger. Season with patis and black pepper. Finish with leeks.

With a bowl of steaming rice, the vibrant orange sauce will coat and ooze all over the plate. Enjoy each bite as the meat and cartilage impart the flavors infused in them through the entire cooking process. Try this recipe and experience the flavors of Chef Tatung’s hometown with your family.
