In the Filipino Kitchen, Simple Doesn’t Mean Ordinary

In many Filipino homes, the most memorable meals aren’t always the most complicated. Sometimes, it’s that one dish that fills the house with the aroma of garlic and butter—the kind of dish that tells everyone, “Luto na!” For example, the Garlic Mushroom Chicken Pandan Recipe can easily become a favourite in any household.

This Garlic Mushroom Chicken Pandan dish is part of the Simpol Cookbook Series—an ongoing reminder that cooking doesn’t have to be overwhelming to be delicious. It’s simple enough for a weeknight dinner, but special enough for Sunday lunch with the family. The Garlic Mushroom Chicken Pandan Recipe truly embodies the beauty of simplicity in Filipino cuisine.

What makes it unique is how each layer of flavor—marinated chicken, toasted garlic, buttery mushrooms, and a silky cream sauce—builds on familiar pantry ingredients. This is the kind of dish that reminds you of home, and teaches you something new each time you make it. Additionally, the Garlic Mushroom Chicken Pandan Recipe can be easily customised to suit your family’s tastes.

Ingredients

Set A: For Marinating the Chicken

  • 1 kg chicken bone-in, cut into serving pieces
  • 2 tbsp cane vinegar
  • Salt and pepper to taste

Set B: For Searing and Garlic Topping

  • 2 tbsp oil
  • 2 tbsp butter
  • 12 cloves garlic whole

Set C: For the Sauce

  • Seared chicken from Set A & B
  • 1 can whole button mushrooms with brine
  • 2 tbsp all-purpose flour
  • Reserved chicken marinade
  • 1 cup mushroom brine or chicken stock

Set D: Final Seasoning and Finish

  • Salt and pepper to taste
  • 1/2 cup all-purpose cream
  • Chopped parsley optional
  • Buttered vegetables for garnish (optional)

Instructions

Set A: Marinate the Chicken

  1. In a bowl, combine chicken pieces with vinegar, salt, and pepper. In many Filipino recipes, like the much-loved Garlic Mushroom Chicken Pandan Recipe, this step sets the foundation for incredible flavor.
  2. Let marinate for at least 15–30 minutes to allow flavor to penetrate.

Set B: Prepare Garlic and Sear the Chicken

  1. In a wide pan, heat oil and butter together over medium heat. This combination brings out the richness crucial to dishes such as chicken pandan with garlic and mushroom influences.
  2. Add whole garlic cloves and sauté gently until golden brown. Do not rush this—low and slow brings out the sweetness in every bite of your Garlic Mushroom Chicken Pandan Recipe.
  3. Once golden, remove garlic from the pan and set aside for topping later.
  4. In the same pan, sear the marinated chicken in batches, skin side down first, until browned on both sides. Set aside seared chicken.

Set C: Build the Sauce

  1. In the same pan with chicken drippings, add canned mushrooms (with brine) and sauté briefly. This creates the mushroom base essential to a good garlic and chicken pandan dish.
  2. Sprinkle in flour and cook for 1–2 minutes to remove the raw taste.
  3. Return all seared chicken into the pan.
  4. Pour in reserved marinade and about 1 cup of mushroom brine (or chicken stock).
  5. Cover and simmer over low heat for 15–20 minutes, or until chicken is cooked through and sauce begins to thicken. For recipes like chicken pandan with garlic and mushroom, this step helps meld the flavors perfectly.
  6. Season lightly with salt and pepper to develop flavor. Cover again and simmer until sauce becomes gravy-like in consistency.

Set D: Finish and Serve

  1. Lower the heat. Once chicken is fully cooked and sauce is thick, gently stir in cream. Do not boil after adding cream to avoid curdling. It’s this creamy finish that sets the Garlic Mushroom Chicken Pandan Recipe apart from other weekday meals.
  2. Add chopped parsley if using.
  3. Arrange toasted garlic on top.
  4. Serve hot with steamed rice and buttered vegetables on the side. This combination is a beautiful way to present a true garlic-mushroom chicken pandan recipe for your guests.

Simpol Cooking Notes

  • On the Garlic: Don’t rush the garlic—cooking it low and slow brings out its natural sweetness. This step alone adds so much character to the dish, as you want robust garlic presence in any good garlic mushroom chicken pandan recipe.
  • Cream Tip: Always add cream at the end, and avoid high heat to prevent the sauce from splitting. Let the residual heat do the work for your chicken pandan mushroom and garlic recipes.
  • Stock Hack: No chicken stock? The mushroom brine from the can is full of umami and does the trick!
  • Serving Style: This dish is great for family-style dining. A little buttered veggies on the side and you’ve got yourself a “panghanda” level ulam with minimal stress. For special occasions, the Garlic Mushroom Chicken Pandan Recipe will surely impress your guests.
  • Leftover Idea: The sauce thickens even more as it cools—perfect for sandwich spreads or reheated over pasta the next day. It’s an ingenious way to use up leftovers from your favorite recipe, especially if it’s a garlic, mushroom, and chicken pandan pan recipe.
