Some restaurants become memorable because of one dish. Others stand out because of the whole experience—the food, the setting, the service, and the feeling that comes with sitting at the table.
At China Blue by Jereme Leung at Conrad Manila, these elements come together once again as the restaurant earns a spot in the 2027 MICHELIN Guide Philippines.
The recognition adds another milestone to the restaurant’s decade-long journey, highlighting its continued focus on Chinese cuisine, craftsmanship, and hospitality.
For Rupert Hallam, general manager of Conrad Manila, the recognition is especially meaningful as the hotel celebrates its 10th anniversary.
“To be recognized by the MICHELIN Guide once again is a tremendous honor for our team,” Hallam said. “This distinction reflects the passion, creativity, and dedication that our culinary and service teams bring to every guest experience.”
Tradition, With a Fresh Take

At the heart of China Blue is a contemporary approach to Chinese cuisine, guided by internationally acclaimed master chef Jereme Leung and Conrad Manila’s culinary team, led by Executive Chinese Chef Eng Yew Khow.

The restaurant continues to draw from traditional Chinese cooking while giving familiar techniques and ingredients a more contemporary expression.

This year, that approach can be seen in several new à la carte creations, including roasted stuffed pigeon with seafood treasure and abalone; braised whole abalone with sea cucumber, morel mushrooms, and crab meat; and baked lobster with white wine and cheese sauce.

These dishes join China Blue’s established favorites, giving diners more reasons to return, whether for a family celebration, business gathering, or simply a meal worth making time for.
More Than One Recognition
The MICHELIN Guide distinction is also part of a bigger year for China Blue.
At the 2026 World Luxury Restaurant Awards, the restaurant received three honors: Best Chinese Cuisine – Global Winner, Best Luxury Family Restaurant in the Philippines, and Best Luxury Hotel Restaurant in the Philippines.
For Hallam, these recognitions are an encouragement to keep pushing forward.
“As Conrad Manila celebrates its tenth anniversary this year, this recognition makes the occasion even more meaningful and inspires us to continue delivering dining experiences of the highest standard,” he said.
A View, A Table, A Celebration

Overlooking Manila Bay, China Blue combines contemporary and traditional Chinese design with panoramic views and private dining rooms.
But beyond the elegant interiors and recognitions, the restaurant continues to center its experience on what happens around the table—good food shared over conversations, celebrations, and occasions worth remembering.
For a restaurant that has spent a decade building its identity, another MICHELIN Guide recognition is less about simply adding another accolade and more about continuing a culinary story that keeps inviting diners back to the table.
