In almost every Pinoy home, rice is life. We love having rice three times a day! From the warm sinangag at breakfast, to the big cup of rice at lunch, up to the hot rice at dinner, it is always the main star of our dining table. But the real magic of a Pinoy kitchen happens in the morning, when our nanays open the rice cooker or kaldero and finds yesterday’s cold leftover rice—our humble bahaw. Where others see cold leftovers, a Filipino mother sees a chance to show her warm love for her family.

Growing up, many of us learned to treat rice with big respect. Long before that rice reached our kitchens, our hard-working Filipino farmers spent months under the hot sun and heavy rain, planting and harvesting every single grain.

And on busy mornings, a hot pan and crushed garlic turn those dry grains into delicious, golden sinangag.
