KitchiZen: The Simpol Art of Kasapatan Explores Mindfulness and Simplicity in Everyday Life

MANILA, Philippines — Many Filipinos have learned to endure. We wake early, work long, and promise ourselves rest later. Over time, endurance becomes a virtue. But somewhere along the way, many quietly lose their rhythm.

A new book by Chef Tatung Sarthou begins with that recognition.

Set for release in the first quarter of 2026, KitchiZen: The Simpol Art of Kasapatan reflects on a question many people feel but rarely ask aloud: What happens when a life built on striving no longer feels whole?

Sarthou, a chef, author, and cultural storyteller, has spent more than a decade observing everyday Filipino life through the Simpol platform. In homes, wet markets, and kitchens across the country, he noticed something that rarely appears in formal conversations about success: ordinary people already practice a quiet wisdom about enough.

The kitchen, he realized, is one of the first places where this wisdom is learned.

There, fire must be watched. Timing matters. Ingredients are used with care. And knowing when to stop—when the dish is balanced—is part of the craft.

From that everyday discipline emerges the central idea of KitchiZen: that living well is not about constant acceleration, but about learning proportion.

“For too long we have traded our breath for our livelihood,” says Sarthou. “KitchiZen is an invitation to pause, to exhale, and to rebuild a life that does not erode the very people living it.”

Rather than offering quick solutions, the book moves through stories, reflections, and memories drawn from ordinary life. It explores the Filipino values of loob, kapwa, and kasapatan—ideas that shape how people care for one another even in difficult times.

In doing so, KitchiZen speaks to a shared experience many Filipinos carry quietly: exhaustion from working hard without ever feeling finished.

The book offers a different possibility: that a meaningful life may not be built by doing more, but by learning when enough is already enough.

“Part philosophy, part memoir, and full-on cultural work, this book will make you stop in your tracks and think of other ways of being. Filled with vignettes, musings, and memories, this book is told in the voice of a soul that is gentle and wise. A book for the ages.”
— Danton Remoto, prize-winning novelist and poet

KitchiZen is organized around what Sarthou calls the Rhythms of Renewal, four movements that help readers reconnect with themselves and with others:

  • Hinga — The Sacred Pause
A reminder that rest is not weakness but a way of protecting the self.
  • Pagbalik — The Return
The rediscovery of kasapatan, the quiet confidence that enough is enough.
  • Pagdiwang — Celebration
Shared joy that restores kapwa and strengthens community.
  • Paghabi — Weaving
The daily work of bringing life, relationships, and purpose back into alignment.

Together, these rhythms offer a language for navigating a life that often feels rushed, fragmented, and out of balance.

At its heart, KitchiZen speaks to people who have spent years taking care of everyone else and are only now beginning to ask what it means to take care of themselves.

In a culture that has long celebrated endurance, the book offers a gentler idea: that dignity may lie not in how much we carry, but in knowing when enough is already on the table.
