INSTRUCTIONS
1. Prepare the Fish Fillets:
First, season the fish fillets with salt and pepper. Then, add the flour, cornstarch, and water. Mix until you form a light, smooth batter — just enough to coat the fish without being too thick.
2. Fry the Fish:
Next, heat oil in a pan over medium heat. Carefully place the battered fish fillets into the hot oil and fry until crisp and golden, flipping as needed to cook both sides evenly. Once done, transfer to a plate lined with paper towels to drain excess oil.
3. Mix the Sauce:
Meanwhile, in a small bowl, combine the chicken stock, sweet chili sauce, and oyster sauce. Stir well and set aside — this will be your savory-sweet base.
4. Sauté the Aromatics:
In the same pan (to keep all those tasty bits), sauté the ginger, onion, bell pepper, garlic, and tausi (black beans) until everything is fragrant and lightly softened. This is where the bold flavor starts to build.
