At El Luchador, Mexican food comes with a Filipino point of view. The restaurant serves familiar Mexican favorites with bold Filipino flavors. It also offers a colorful, welcoming atmosphere for students, families, and friends.

The concept makes Mexican food approachable without losing its character. Chef Fred Arellano wants Filipino diners to discover Mexican flavors through dishes that feel familiar. Meanwhile, Chef Kalel Chan draws inspiration from his Ilocano roots. Together, they bring two food cultures to the same table.

The result is a menu that blends Mexican favorites with Filipino influences. From rich quesabirria to savory carnitas, each dish offers something worth discovering.

Built for the Neighborhood

Surrounded by schools and large subdivisions, the area offered an opportunity for a Mexican restaurant with an affordable menu.

For Chan, the restaurant’s location helped shape its concept. Surrounded by schools and large subdivisions, the area offered an opportunity for a Mexican restaurant with an affordable menu.

“I wanted to bring in a colorful, vibrant atmosphere with an affordable menu, so students and families could enjoy it regularly,” Chan says. He also wanted El Luchador to become a place where people could connect and build a sense of community.

“El Luchador” means “the fighter.”

Even the name reflects the restaurant’s fighting spirit. “El Luchador” means “the fighter.” The name draws from Chan’s childhood fascination with wrestling. It also reflects the challenges of running a food business.

“Anyone in the food and beverage industry knows it’s a constant fight to stay in the game,” he says.

Mexican Food, Filipino Familiarity

“We found comfort and warmth in its flavors, and we wanted to share that same feeling with others,” Arellano says.

Although El Luchador celebrates Mexican cuisine, Filipino influences give its menu a familiar touch.

Arellano and his wife, Frances, developed the concept after returning from Canada. While living abroad, they discovered Mexican food and grew fond of its comforting flavors.

“We found comfort and warmth in its flavors, and we wanted to share that same feeling with others,” Arellano says.

Chan brings another layer to the menu through his Ilocano heritage. “I grew up in La Union and I’m a proud Ilocano,” he says. His childhood favorites included dinakdakan and papaitan. Their bold flavors continue to influence his cooking today.

By blending these influences with Mexican dishes, Chan creates flavors that feel familiar to Filipino diners while offering something new.

Dishes Worth Coming Back For

One of El Luchador’s signature dishes is the Quesabirria Taco. Arellano says it took time and patience to perfect. Paired with consommé, the dish delivers rich, satisfying flavors.

Chan, meanwhile, favors the Carnitas con Chicharones. However, he has noticed that burritos and chimichangas are popular among younger diners, especially kids.

Good Food, Good Vibes

Ultimately, El Luchador wants to offer more than a meal.

The restaurant was only about a month into operations when Chan shared his experience. Even then, some guests had already returned two or three times a week. For El Luchador, these repeat visits offer an encouraging start as it builds its place in the neighborhood.
