Chef Waya Araos-Wijangco joins the top integrated media community, Simpol.ph, as one of its newest columnists, a role that beautifully aligns with her lifelong passion for food, people, and positive change. 

With over two decades of experience in catering, restaurant operations, and culinary development, Waya has cultivated a legacy rooted in care, empathy, and community. Her path into the culinary world was deeply influenced by her background in community development, instilling in her a belief that food is not merely to satisfy hunger but to nourish lives and uplift those often left on the margins. Her restaurants have become havens of opportunity, platforms for empowerment, and catalysts for social change.

Waya is a vocal champion for gender equality in the often male-dominated kitchen culture, and she has led the charge for sustainable restaurant practices, fair labor policies, and inclusive employment, particularly advocating for persons with disabilities (PWDs). Her work reflects a chef’s hand but a humanitarian’s heart.

A defining chapter of her advocacy was her founding role as the president of Open Hand School, a pioneering vocational institution that has given hope and purpose to young adults with special needs. Under her guidance, the school became a beacon of possibility, equipping its students with the tools to thrive in the hospitality sector, while simultaneously reshaping societal perceptions of individuals with disabilities.

Waya’s culinary style is a personal narrative as each dish is a reflection of her well-traveled experiences, blended harmoniously with a profound respect for the Philippines’ local ingredients, farmers, and rich culinary heritage. Her food tells a story, of places explored, cultures embraced, and home always honored.

At present, Waya is the executive chef and owner of Gypsy Baguio by Chef Waya.
