HOLIDAY CHICKEN HAMONADO

Thinking of a recipe to prepare for special occasions? This chicken dish is so festive and delicious! Perfect for the holidays!

Serves 5 to 6. 

INGREDIENTS:  

Set A: 


  • 1 whole chicken (1.2 kg.)
  • 1 tablespoon salt
  • 1 whole onion, quartered
  • 2 slices ginger
  • 4 cloves garlic, sliced

 Set B: 

  • 4 cloves garlic, sliced
  • 3 pcs. star anise
  • ½ cup soy sauce
  • ¾ cup brown sugar
  • ¼ cup vinegar
  • ¼ cup banana catsup
  • 1 can pineapple chunks with juice
  • 1 teaspoon cracked black pepper
  • 1 piece red bell pepper, cut into strips
  • 1 slice ginger, cut into strips
  • 2 cups water
  • 1 tablespoon cornstarch
  • Salt and pepper, to taste

Chef Tatung’s Tips:

  • Marinating the chicken with salt overnight makes a big difference in the texture and flavor of the final product. I recommend you do this if you are preparing for a special occasion.
  • You can make this dish days ahead and just reheat in an oven to create a beautiful glazed finish. Preheat the oven to 180°C, and bake for 20 to 30 minutes. Be sure to baste with sauce every few minutes.
