Favorite Pinoy-Style Fried Chicken

There are different blends for the dredging mixture of fried chicken because the spices used depend on individual preferences. The ingredients could even determine the crunchiness of the outer layer and the overall flavor lingers.

The satisfying crunch that comes from biting into it, the succulence of the juices that ooze out after tearing off a piece, and the savory blend of spices in the gravy–these factors make fried chicken worth looking forward to.


Ingredients

3 pcs. Premium Choice Chicken Leg Quarters, cut into 2
For the Marinade:
2 Tbsps. calamansi juice
1 1/2 tsp. salt
1 pc. egg white
For the Breading:
3/4 cup flour
1/4 cup cornstarch
1 tsp. salt
1 tsp. fine white pepper
2 tsps. garlic powder
1 tsp. chili powder
Cooking oil, for frying
For the Gravy:
3 Tbsps. butter
3 Tbsps. flour
1/4 cup canned mushrooms, chopped
Five-spice powder
1 Tbsp. Maggi Magic Savor
1 Tbsp. soy sauce
1 1/4 cup canned mushroom brine
Black pepper

Instructions

  1. Marinate the Premium Choice Chicken Leg Quarters with salt and calamansi juice. Mix and leave it rest for 15 minutes, or overnight.
  2. Prepare the breading mix. In a bowl, add the all-purpose flour, cornstarch, salt, white pepper, garlic powder, five-spice powder, and chili powder. Mix well.
  3. After leaving the chicken to marinate for 15 minutes, add the egg white into the bowl. Mix, then start dredging the chicken in the breading mix.
  4. In a pan, heat the oil. Put the coated chicken in and let it fry until it becomes crisp. Make sure to move the chicken around to make sure it cooks evenly.
  5. While waiting for the chicken to cook, prepare the gravy. In a pot, melt the butter. After melting the butter, add the flour and mix. Once they have fully incorporated with each other, add the mushrooms, garlic powder, five-spice powder, and mushroom brine. Mix well.
  6. Check the chicken if it is fully cooked. Leave it to cook for a few more minutes until it becomes golden-brown.
  7. To achieve the gravy color, add Maggi Magic Savor and soy sauce. Mix and let the gravy continue to cook.
  8. When the chicken has achieved the golden-brown color, remove it from the pan and place it on a plate lined with paper towels to drain the excess oil.
  9. Finish the gravy with black pepper. Once cooked, pour it into a bowl. Serve it with the fried chicken.
