A Restaurant-Style Pasta You Can Cook Anytime

Ingredients
Set A: Pasta

200 g spaghetti noodles
-
Water, for boiling

Salt
Set B: chicken

1 pcs Premium Choice Chicken Breast Fillet, (180 grams) cut into strips

2 Tbsps Silver Swan Soy Sauce

1 Tbsp cornstarch
Set C: Aromatics

Cooking oil

1 Tbsp onion, minced

1 Tbsp garlic, minced

2 large dried shiitake mushrooms, rehydrated and cut into strips
Set D: Sauce

4 Tbsps Oyster Sauce
-
4 Tbsp sweet chili sauce
-
1 tsp sriracha sauce or as desired.

2 Tbsps peanut butter
-
1 Tbsp sugar
-
Pasta water as needed (3/4 cup approx)

1–2 Tbsps sesame oil
Garnish

2-inch spring onions, chopped

2 Tbsps peanuts, crushed

Instructions
Step 1: Cook the Pasta
Bring a pot of salted water to a boil. Add spaghetti and cook for 8 minutes or until al dente. Reserve some pasta water before draining.
Step 2: Marinate the Chicken
In a bowl, combine the chicken breast strips with soy sauce and cornstarch. Mix well and set aside to marinate while you prepare the other ingredients.
Step 3: Sauté and Cook the Chicken
In a pan, heat oil over medium heat. Sauté onion, garlic, and shiitake mushrooms until fragrant. Add the marinated chicken and stir continuously until fully cooked and lightly browned.
Step 4: Make the Sauce
Combine sauces in an a bowl and mix the oyster sauce, sweet chili sauce, sriracha, peanut butter, sugar and add a ladle of pasta water to loosen the sauce. Mix well until smooth and combined.
Step 5: Combine with Pasta
Pour the sauce into the pan with sautéed aromatics and chicken bring to a simmer and add the pasta. Toss until the noodles are evenly coated with the sauce.
Step 6: Finish and Serve
Drizzle in sesame oil. Toss again and top with spring onions and crushed peanuts before serving.
