Filipinos are fond of celebrations and gatherings. And it won’t be complete without the eating and drinking part where we usually prepare ‘pulutan’. Try making this dish made simple for you.

Serves 5 to 6.

INGREDIENTS:

Set A:

  • 350 grams pork belly or pork mask
  • 1 teaspoon salt
  • 1 tablespoon vinegar
  • 1 teaspoon cracked black pepper
  • 4 cloves garlic, smashed
  • 3 – 4 cups palm oil, for frying
  • 8 pieces tokwa (tofu)

Set B:

  • 1 piece large onion, chopped
  • 2 stalks celery, chopped
  • 2 pieces finger chilies, chopped

Set C (Sauce):

  • 6 cloves garlic, smashed
  • 2 tablespoons oyster sauce
  • 4 tablespoons soy sauce
  • 5 tablespoons vinegar
  • 1 teaspoon sugar
  • ¾ cup chicken stock or water
  • ½ teaspoon black pepper

Chef Tatung’s Tips:

  • Use firm tofu, which is sturdy enough to fry.
  • Wrap tofu with a thick layer of paper towels before frying.
