Homemade Luncheon Meat Recipe

Ingredients
  

Set A – Cure Base

  • 1/4 cup cold water
  • 2 tsp fine salt
  • 1/2 tsp curing salt pink salt or “prague powder”
  • 1 tablet or capsule of Vitamin C ascorbic acid, crushed

Set B – Meat Mixture

  • 700 g ground pork with 30% fat, well chilled
  • Cure base from Set A

Set C – Seasonings

  • 1 pack Magic Sarap or all-in-one seasoning
  • 1/2 tsp ground nutmeg
  • 2 tsp sugar
  • 1/4 cup cornstarch
  • 1/2 tsp ground white pepper
