Gyudon Recipe (Japanese Beef Bowl with Jammy Eggs)

Ingredients
  

  • 2 cups cooked white rice steamed
  • 250 g thinly sliced beef ribeye, sirloin, or sukiyaki-cut
  • 1 medium white onion julienned
  • 1 tsp fresh ginger finely grated
  • 1 cup dashi stock
  • 3 tbsp Japanese soy sauce
  • 2 tbsp mirin
  • 1 tbsp rice wine
  • 1 –2 tsp sugar adjust to taste
  • Pickled ginger beni shoga, for garnish
  • 2 jammy eggs soft-boiled and halved
  • Chopped leeks or scallions for garnish
