Easy Poke Bowl Recipe for Two

Ingredients
  

Set A – Rice

  • 1 cup sushi rice or Japanese short-grain rice
  • Water for washing and cooking

Set B – Sushi Rice Seasoning

  • 2 tbsp rice vinegar
  • 1 tbsp sugar
  • Pinch of salt

Set C – Spicy Mayo Sauce

  • 3 tbsp Japanese mayonnaise
  • 1 tsp sriracha
  • 1 tsp honey
  • 1 tsp rice vinegar
  • 1/2 tsp sesame oil
  • 1 clove garlic grated

Set D – Tuna Marinade

  • 200 g sashimi-grade tuna or salmon, diced
  • 1 tbsp soy sauce
  • 1 tsp rice vinegar
  • 1/2 tsp sesame oil
  • 1 tsp honey
  • 1 tbsp spring onions chopped

Set E – Toppings

  • 1 avocado sliced
  • 1/2 cucumber sliced thin
  • 1/2 ripe mango diced
  • Nori sheets cut into strips
  • Extra spring onions for garnish
