Classic Adobong Puti (White Pork Adobo) Recipe

Ingredients
  

Set A (Base)

  • 1 kilo pork belly with skin and fat, cut into large chunks
  • 1 head garlic smashed (with skin on)
  • 1 –2 tbsp whole black peppercorns
  • 1 tsp cracked black pepper
  • 3 –4 bay leaves

Set B (Seasoning & Sauce)

  • ½ cup vinegar cane vinegar or coconut vinegar
  • 3 tbsp fish sauce
  • ½ cup water optional, if needed
