This cake has a citrusy orange flavor that will brighten up your day. Bathe it in good quality rum to make a lovely rum cake.

INGREDIENTS:

Set A:
1 1/2 cups cake flour
2 tsp. baking powder
1/2 tsp. salt

Set B:
3/4 cup heavy cream
3/4 cup orange juice
1/4 cup orange marmalade

Set C:
1/2 cup unsalted butter, at room temperature
1 cup granulated sugar
2 whole eggs
1 tsp. vanilla extract

PROCEDURE:
A. Sift the Set A ingredients into a bowl and mix everything.

B. Combine Set B ingredients in a separate bowl and mix until well combined.

C. Beat butter and sugar until fluffy and sugar is dissolved. Add eggs one at a time. Then add the vanilla extract last. Fold in dry ingredients (Set A) and wet ingredients (Set B) alternately into creamed butter until just combined. Pour into a generously greased loaf pan and bake. To check doneness, insert a toothpick to check if it comes out clean. Cool completely before removing from the loaf pan.

ORANGE GLAZE
INGREDIENTS:
2 Tbsps. unsalted butter, at room temperature
1 cup powdered sugar
4 Tbsps. orange juice

Procedure:
In a bowl, combine all ingredients and mix until well blended. Place in the chiller before using.
