I learned how to make Apple Pie as a kid. Back then, apples were so hard to buy locally, so apple pies were super special. The recipe for the filling is very close to our family recipe. Hope you enjoy it.

INGREDIENTS:
Set A (Crust):
1 cup unsalted butter, cold
3 cups all-purpose flour
1/2 tsp. salt
6 Tbsps. water, cold

Set B (Filling):
1/2 cup unsalted butter, at room temperature
1 cup brown sugar
6 pcs. green apples, peeled, cored, and sliced
1/2 cup all-purpose flour
1 1/2 cups full cream milk
1 Tbsp. lemon juice
1 tsp. lemon zest

PROCEDURE:
A. In a bowl, combine Set A ingredients, except water, and mix, using a fork, until the mixture becomes sand-like in texture. Drizzle the cold water and knead slightly until the dough comes together but is not smooth. Shape it into a ball. Gently press to form a crust. Let it rest for 30 minutes to 1 hour.

B. Meanwhile, combine Set B ingredients into a saucepan, and cook over medium heat while stirring constantly until the apple sauce thickens and the apples are cooked. Cool before using.

ASSEMBLY:
Divide the dough into two and shape it into a disc. Then roll out to make the bottom and top layers. Remember to rest the dough after every step. Line the bottom of the pan with one layer of crust, put filling, then top with another layer of crust. You may weave the top crust if desired. Crimp and brush with egg wash, then bake until the crust is light golden brown.
